Sauces

  • Tangy Dill Sauce
    1/2-cup mayonnaise
    1 tablespoon lemon juice
    1 tablespoon dries dill or freshly chopped fine
    1/2 tablespoon finely chopped parsley
    1/2 finely chopped shallot
    Season with salt and white pepper to taste and combine all ingredients in a bowl, stir until well mixed.
    You can make your dill sauce in advance and store it in the refrigerator until you need it.

  • Cocktail Sauce
    1-cup ketchup
    2 tablespoons horseradish
    1 tablespoon lemon juice Mix all ingredients together in a bowl, and serve.

  • Orange Marmalade Sauce
    1-cup orange marmalade
    1-tablespoon horseradish
    Combine and serve with cold shrimp instead of cocktail sauce.

  • Bolognese Sauce
    1 pound extra lean ground beef
    2 cloves crushed garlic
    1 medium onion diced
    1 tablespoon dried parsley
    1 tablespoon dried sweet basil
    1 teaspoon dried oregano
    1-14.5 ounce can diced tomatoes
    1-8 ounce cans tomato sauce
    In a saucepan sauté ground beef, garlic, onion, parsley, sweet basil, and oregano until the beef is well browned, add tomatoes and tomato sauce and if you like a little tomato paste to help thicken the sauce, simmer for 30 minutes and serve.

  • Sauce For Eggplant Tomato Bake
    (For Stuffed Bell Peppers Double The Recipe)

    Tomato Sauce:
    1/4 cup chopped onions
    1 medium bay leaf
    1 1/2 teaspoons dried Italian seasoning
    1 clove minced garlic
    2-tablespoon olive oil
    28 ounces crushed tomatoes (canned)

    Sauté your onions, garlic, and Italian seasoning, and bay leaf in hot oil until vegetables are tender, add your tomatoes, simmer about 30 minutes uncovered on low heat or until you reach your desired consistency, remove the bay leaf from your sauce.

  • Barbecue Sauce
    2 tbsp. butter
    1 c. water
    1 c. ketchup
    2 tbsp. vinegar
    1 tsp. salt (optional)
    1/4 tsp. pepper
    1/4 c. onion, finely chopped
    2 tbsp. Worcestershire sauce
    2 tbsp. lemon juice
    2 tbsp. brown sugar
    1 tsp. dry mustard powder
    Melt butter. Saute onion until soft. Add remaining 9 ingredients. Simmer for 20 minutes. Makes about 2 cups of BBQ sauce.
