Old Time Pasta Sauce

Ingredients For Old Time Pasta Sauce:

1 quart olive oil ( good olive oil )
5 lbs. onions ( chop fine )

5 ozs. garlic (the more the better I like it)

3 oz. fresh parsley chopped fine

2 tablespoons fresh sweet basil ckopped fine (dry is OK too )

3 #10 tins tomatoes ( fresh is better if you have them and don't forget to use crushed ones )

3 # 10 tins water ( a # 10 tin is about 3 quarts )

Salt to taste ( I use about 2 tablespoons but I'm not big on salt )

2 tablespoons pepper

2 # 10 tins tomato paste

Instructions For Old Time Pasta Sauce:

Using a large heavy botton pot, place olive oil in pot and get it hot, at this time place the onions, garilc, parsley, sweet basil, pepper, and saute for about 10 minutes (don't burn them ) then add your tomatoes and water, now simmer all ingrediance for about one hour then add the tomato paste and simmer for about another half hour(make sure you incorperate the paste into the sauce well ) shut off your fire and add the salt tasting as you do so, then remove from stove. ( you could add mushrooms or anything else that you may like while it is simmering the first hour ).
